Cassava Brownies

Don't skip dessert when you're following a Paleo diet. Instead, make these Paleo brownies with cassava flour! They're completely Paleo-approved, and just as chocolatey and delicious as desserts baked with wheat flour.

Ingredients

  • ½ cup coconut oil

  • 3 ounce unsweetened chocolate, chopped

  • cup honey

  • 2 eggs

  • 1 teaspoon vanilla

  • ½ cup cassava (100% yuca root) flour

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

Directions

  1. Preheat oven to 350°F. Line an 8-inch square baking pan with foil, extending foil over edges of pan. In a 2-qt. saucepan heat oil, chocolate, and honey over medium-low until melted and smooth. Remove from heat. Stir in eggs and vanilla until combined. Stir in flour, baking soda, and salt until combined. Spoon into prepared pan.

  2. Bake 30 minutes or until set. Cool in pan on a wire rack. Use foil to lift uncut brownies from pan. Cut into squares.
