Ingredients For Portobello Mushrooms

The main ingredient for this air fryer recipe is obviously portobello mushrooms. The marinade ingredients are basic ingredients that can be found at your local grocery store. 

  • Portobello Mushrooms: 4 large portobello mushrooms. If you use less than 16 ounces of mushrooms, adjust the marinade recipe accordingly.
  • Oil: Use the oil that fits your lifestyle or dietary needs. I used extra-virgin olive oil.
  • Coconut Aminos: Coconut aminos is a gluten-free alternative to soy sauce. It’s also low-carb, paleo, and whole30 compliant. Low-sodium soy sauce can also be used. 
  • Vinegar: Grab your favorite vinegar. I used red wine vinegar. Other suggestions include balsamic, white, and apple cider vinegar.  
  • Herb: Use your preferred herb. I used dried rosemary. Thyme, parsley, basil, and oregano can also be used. 
  • Garlic: 1 garlic clove, omit the garlic or use more if you want. 
  • Salt & Pepper

What Are Portobellos ?

Portobellos are large mushrooms. If you’re familiar with cremini mushrooms then you’re familiar with portobello mushrooms because portobellos are larger, mature versions of creminis. They do taste different though. Because portobellos are grown for a longer period of time, they’re a little dryer than creminis and have a bit of a stronger mushroom flavor. Their thick, meat-like texture makes them a popular vegetarian replacement for meat in burgers and sandwiches. Portobellos are larger than the average edible mushroom; they have a large cap with dark gills. Their large size makes them popular for stuffing.

A Healthy Marinade

The star of this easy vegan air fryer recipe is the marinade! This healthy marinade is low-carb, paleo, and whole30 compliant. Mix everything together and pour on top of the marinade. Marinate the mushrooms in a covered bowl or plastic bag. I used a bowl.

This air fryer recipe comes together quickly. It does not require the mushrooms to marinate a long time. Marinate the portobello mushrooms for 30 minutes at room temperature. The mushrooms will really soak up the marinade.

WHAT IS AN AIR FRYER?

An air fryer is an appliance that circulates hot air around food at high-speed, cooking the food and producing a crispy ‘fried’ layer. Air fryers come in various sizes. What size air fryer you should get depends on your needs. For this recipe I used my 5.8 quart.

Prep The Mushrooms

Before you marinate the mushrooms, you have to prep them first. Prepping the mushrooms involves cleaning the mushrooms and removing the stem and gills (optional). There are different ways to clean mushrooms. If you have a preferred way you wan to use, by all means do so.

I clean mushrooms with a damp paper towel. Wipe each cap down thoroughly but gently. Next, cut off the stem & remove the gills. The stem should pull off easily. If not, you can cut it off. To remove the gills, hold the mushroom and scoop out the gills with a spoon. The gills are actually edible. You can leave the gills intact. Personally I like to remove them so that’s what you see here.

How To Make Portobello Mushrooms In The Air Fryer

Cooking portobello mushrooms is very easy thanks to the air fryer. After a 30-minute marinade, the portobello mushroom only needs 10 minutes in the air fryer! 

Prep The Mushrooms

  1. Damp a paper towel and wipe down each portobello cap.
  2. Cut off the stem & remove the gills. The stem should pull off easily, if not you can cut it off. To remove the gills, hold the mushroom and scoop out the gills with a spoon.

Air Fryer

  1. In a small bowl, mix together the marinade ingredients until well blended.
  2. Add the prepared portobello mushrooms to a large bowl or plastic bag. Pour the prepared marinade on top of the mushrooms. Ensure all the mushrooms are evenly coated. Cover/seal and marinate at room temperature for 30 minutes.
  3. When ready to cook, preheat the air fryer to 350 degrees F.
  4. Remove the mushrooms from the marinade and place in the air fryer basket. It’s okay if the mushrooms slightly overlap, they will reduce in size as they cook. You may need to cook this in batches depending on the size of your air fryer.
  5. Cook 8-10 minutes, flipping halfway through.

OTHER COOKING METHODS

Don’t have an air fryer yet? That’s okay. While I do recommend getting one, you can also grill or bake the portobello mushrooms. Start by marinating the mushrooms according to air fryer instructions in the recipe box.

GRILL: Set grill to medium-high heat. Add portobello mushrooms & grill about 4-5 minutes on each side. Brush with the marinade occasionally. 

BAKE: Preheat oven to 400F. Place marinated portobello mushrooms on a large baking sheet in a single layer. Bake 15 minutes or until the mushrooms are tender.

Storing Leftover Portobello Mushrooms

Leftover air fryer mushrooms should be stored in an air tight container in the refrigerator. When stored properly, the mushrooms will keep for up to 4 days. 

Tips 

  • Cook the portobello mushrooms until tender. That may mean more or less time than stated. 
  • You do not need to oil the air fryer before adding the mushrooms. The marinade that has been absorbed by the mushrooms will be enough that they mushrooms will not stick to the air fryer pan. 
  • Don’t have an air fryer? Grill or bake the portobello mushrooms! 
  • The marinade is versatile! It can also be used on veggies, poultry, pork, and beef.

I love these mushrooms because they are veggies, but they are filling like meat- best of both worlds!
